Organic on a Budget – Re-growing from Kitchen Scraps

At the Resparkle camp, we are all for eating organic vegetables as it’s so much tastier and of course peace of mind knowing you’re not putting harmful pesticides in your bodies.

However, we have to confess, we do feel the pinch whenever the bag of organic veg comes up to quite a hefty sum especially when you’ve hungry men & kids to feed!

But we never let an obstacle get in our way to a healthy life, so what can we do? We rethink and reuse of course! And re-growing left over veg from scraps is a smart way to go about it. It gives your organic dollar a bigger stretch plus nothing beats harvesting and eating fresh pesticide free vegetables from your own garden!

Here’s top 5 easy to re-grow vegetables that you can start with (adapted from Wake-up World). You don’t need a lot of space to get this going, just grow them in pots preferably near your kitchen so you won’t forget to water them.

 

1) Romaine Lettuce / Cabbage

This grows from the root end. Cut the stalks off as you normally would, and place the root end directly into soil. You would need to keep the soil very moist for the first week until new shoots start to appear.

The plant will continue to grow, and within a few weeks like MAGIC, it will sprout a whole new head!

 

2) Bok Choi

3) Lemongrass

To re-grow, place the root end (after you’ve cut the rest off) in a glass jar with a little water, and leave it in a sunny position.

Within about a week, new growth will start to appear. Transplant your lemongrass into a pot and leave it in a sunny outdoor position. You can harvest your lemongrass when the stalks reach around a foot tall – just cut off what you need and leave the plant to keep growing.

 

4) Onions

Onions are one of the easiest vegetables to re-grow. Hell, it even starts its re-growth in the pantry if you leave them there for too long!

Just cut off the root end of your onion, leaving a ½ inch of onion on the roots. Place it in a sunny position in your garden and cover the top with soil. Ensure the soil is kept moist. Onions prefer a warm sunny environment, so if you live in a colder climate, keep them in pots and move them indoors during frostier months.

Keep re-planting the root ends you cut off, and you’ll never need to buy onions again.

 

5) Sweet Potatoes

Bury all or part of a sweet potato under a thin layer of soil in a moist sunny location. New shoots will start to appear through the soil in a week or so. Once the shoots reach around four inches in height, remove them and re-plant them, allowing about 12 inches space between each plant. It will take around 4 months for your sweet potatoes to be ready.

**To propagate sweet potatoes, it is essential to use an organic source since most commercial growers spray their sweet potatoes to prevent them from shooting.
